Couple questions: Food and romance
What do you cook in a Moroccan cooking class?
A typical class covers three to five dishes. Expect a tagine, such as chicken with preserved lemon and olives or lamb with prunes and almonds, plus a couscous, cooked salads like zaalouk or taktouka, and sometimes pastilla or msemen flatbread. If the class includes a souk walk, it adds a spice lesson.

The short answer
A typical class covers three to five dishes. Expect a tagine, such as chicken with preserved lemon and olives or lamb with prunes and almonds, plus a couscous, cooked salads like zaalouk or taktouka, and sometimes pastilla or msemen flatbread. If the class includes a souk walk, it adds a spice lesson.

In more detail
The spice lesson covers how to recognise and use ras el hanout, cumin, turmeric, ginger, paprika and saffron. The better classes teach how to build a chermoula marinade, how to layer a tagine so it does not dry out and how to roll couscous by hand.
What you cook changes with the region. Our guide lists Essaouira for fish tagine, chermoula and coastal salads, and Chefchaouen for Rif dishes such as bean stews, kefta and herbs. Fes classes are often smaller and run by women's associations or family homes.

Most classes end with a shared meal of what you cooked, with mint tea and fruit. Vegetarian and vegan classes exist in Marrakech and Fes if you ask when booking.

Good to know
- Ask how much of the class is hands-on. The best ones have you chopping and seasoning.
- Mention dietary needs at booking and again the day before.
- Buy spices from the stall your teacher recommends.
